Paul Wallace Reflection Chardonnay 2022 Littlemill Palate: Fresh green applesGrapes for the Paul Wallace Reflection Chardonnay 2022 were harvested on 28 February 2022 from a Chardonnay vineyard (Clone CY95) planted on Bokkeveld shale soils. Hand picked into lug boxes before vinification takes place, grapes were whole bunch pressed and the juice taken to Burgundian oak barrels where it underwent fermentation. There is a 20% new oak contribution and a mixture of 500 litre and 300 litre barrels were used for maturation.
